Monoglyceride Flakes

Used in molecular gastronomy to create oil foams, butters, vinaigrettes and other preparations. It acts as a high stability emulsifier that helps keep the oil component from separating from the water portion of a food product. 

Usage Rate:  The flakes must be about 2% of oil, by weight, or about 1g for 50g of oil. Equivalent to Texturas Glice product.
