Locust Bean Gum

Is a powerful thickening and emulsifying agent produced from the seeds of the carob tree. In the food industry locust bean gum is used in many pastry and dairy applications, including gels and glazes, fruit applications and baked goods. When combined with xanthan gum it produces an increased and more stable gelling capability.

When added to gelling agents such as agar agar or gellan gum, locust bean gum increases the strength and elasticity of the resulting gel.

Usage: From 2gm per Kg/L in thickening or 25% of total weight in gelling.
