Mango Caviar
A great addition to any dessert or to a salad of duck and rocket.
- 500ml Mango Juice
- 2g Sodium Alginate
- 1g Sodium Citrate
Method
Mix the mango juice, sodium alginate and sodium citrate and allow to hydrate, use whisk to mix and achieve even distribution.
Drop small amounts of the solution in a calcium chloride bath and allow to set, rinse spheres in water and use as you wish.
Note: Sodium Alginate dose not have to be cooked out like other thickening agents, example cornflour/starch, and can be used immediately.
To achieve better results refrigerate mixture before making spheres.
