Calcium Chloride Bath
In order to achieve spherification a sodium alginate solution is bathed in a calcium chloride bath, which sets the solution into spheres, caviar, ravioli etc. product.
- 500ml Water
- 3g Calcium Chloride
Method
Combine the water and calcium chloride and mix to dissolve. Strain and rrefrigerate.
Note: Working with a cold sodium alginate solution and calcium chloride bath achieves better setting rates and a more uniform product.
