Sodium Alginate Bath

When creating spheres from solutions with a high calcium content, reverse spherification is required. This Process is achieved by creating a calcium rich solution and then setting in an alginate bath.

Method

Combine the water and sodium alginate with a stick blender to dissolve. Refrigerate to allow air to escape the mixture before using.

Note: Working with a cold base solution and sodium alginate bath achieves better setting rates and a more uniform product.
